Description
Each variety is vinified separately. In January, we rigorously taste them all and unlock the best combination and composition. After a long aging process, we split the Gran Reserva batch in two. The Brut Real has liqueur d’expédition (dosage) added, but Nature remains untouched, and becomes a wilder version that speaks directly of our lands.
Tasting notes:
Deep and brilliant gold, with notable legs. A highly aromatic intensity with a dot of honey among menthol and citrus notes, wrapped around hints of toasted pastries and almonds. Fresh and structured over an unctuous and weighty base, with a lingering post taste.
Varieties:
Macabeo, Xarel·lo, Parellada.
Food Pairing:
Potent match with rice dishes, cannelloni, blue fish, grilled seafood, legumes and dishes featuring Spanish cold meats and cured cheeses.
Restaurant En Rima recommendation:
Cold meat selection from the breakfast menu, or smoked duck magret.
