Each variety is vinified separately. In January, we rigorously taste them all and decipher the best combination and composition. After a long aging process, we are ready. We then split the Gran Reserva batch in two. To our Brut Real, we add liqueur d’expédition (dosage), bringing forth its personality.
Tasting notes: Vivid gold with fine, delicate bubbles. Very floral with hints of apple, ripe pear, and anise. Balanced, elegant, and harmonious in the mouth. A long and refreshing finish with citrus fruit and fennel caresses.
Varieties: Macabeo, Xarel·lo, Parellada.
Food Pairing: Fish rice dishes, white fish in sauces, seafood in a sauce or grilled, white meats, cold meats, soupy rice dishes, fruit desserts, and aperitifs.
Restaurant En Rima recommendation (gastronomic menu): Sautéed baby vegetables alongside carrot and coconut emulsion, with Mastinell cava ‘cloud’.
