Clos Sant Pau is in a way a special caprice for our winery with a limited production of 2000 bottles and made from Muscat de Frontignac coming from only a single vineyard. This wine reminds us of what it means to be unique.
Ideal aperitif wine, works splendidly with soft cheeses and foie. As for the dessert, it works well with puff pastries filled with cream, sorbets citrus or fresh fruit salad.
Pale yellow with greenish reflections, bright, very marked tear. Delicate but intense nose, fresh, with aromas of lemon and tangerine peel. As it opens up, notes of vineyard peach, honey and pollen unfold. Fruity in the mouth with predominance of white fruit (pear) and peaches in syrup. Finish with light hints of Mediterranean herbs: thyme, lemon verbena and sage.
Our vineyards breathe Mediterranean climate in all its fullness. From them are born cavas and wines of great quality. With the excellent combination of tradition and technology of last generation. We have been evolving, betting on organic vineyards, native varieties, and organic farming.
Through the manual harvest we care and treat each strain as a treasure, selecting the best clusters of each vine. Without that love and respect we could not elaborate our wines and cavas with another objective that is not to obtain the maximum quality.
Once the complete process of selection, refrigeration and pressing, the bottled coupage will be subjected to a long fermentation, resting in rhyme to obtain its genuine character. We know the value of time perfectly because of that all our cavas are reserve, 3 years at rest, or large reserve of long aging, from 3 to 7 years.
